Carrie's Cowboy Caviar

When our friend Carrie brought this to our house with corn chips, our son who has CF ate more than his share. We continue to serve this as it's so healthy and delicious. Our son now serves this as an appetizer at his own home.

Ingredients

  • 2 15-oz can black beans, rinsed and drained
  • 1 17-oz can whole kernel corn
  • 2 large tomatoes, chopped
  • 2 large avocados, diced
  • 1/2 red onion, chopped
  • 1/2 c fresh cilantro, chopped
  • 1 Tbsp red wine vinegar
  • 4 Tbsp lime juice
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • Add All Ingredients

Instructions

Prep Time: 20 minutes

Step 1
Mix all of the ingredients above in order and mix well.

Step 2
Serve with corn chips.

Step 3
This can be served as an appetizer or salad when served over lettuce.
