Uncle Jim's Scalloped Oysters By: Leslie A.
Recipe Story
I am a CF mom. This was a staple of my grandma and grandpa's Christmas and Thanksgiving meals. The original recipe called for one pint of oysters and Grandpa doubled it to two pints because he wanted "to taste an oyster in every bite."
Ingredients
- 1 pt fresh shelled oysters, med or small
- 3 c crushed saltine crackers
- 1/4 tsp pepper
- 1/2 c milk or half & half
- 1 stick(s) butter, melted
- Add All Ingredients
Directions
Preheat oven to 400 degrees.
Drain liquid from oysters, reserving 1/2 cup.
Cover bottom of 2 quart dish with crackers.
Put a third of the Oysters on top of the crackers.
Drizzle with 3 tablespoons butter. Sprinkle with pepper. Repeat layers.
Top with remaining crackers.
Combine oyster liquid and milk.
Pour over layers.
Bake uncovered for 30 minutes or until top is golden brown.
