Baked Macaroni and Cheese By: Laura W.
Recipe Story
I am the mother of 6 children; my eldest has CF. Macaroni and cheese is a childhood favorite. It's quick and inexpensive to prepare, and serves as a great comfort food as well.
Ingredients
- 7 oz cooked elbow macaroni
- 1/4 c butter
- 3 Tbsp flour
- 2 c milk
- 8 oz cream cheese, softened
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp Dijon mustard
- 2 c cheddar cheese
- 1 c fresh bread crumbs
- 2 Tbsp parsley
- Add All Ingredients
Directions
Melt the butter in a 3-quart saucepan.
Add the flour and stir for one minute, until the mixture becomes smooth and bubbly.
Add the milk, cream cheese, salt, pepper and mustard.
Continue heating and stirring until sauce thickens, about 3 minutes.
Stir in the macaroni and cheddar cheese.
Pour into a 2-quart casserole dish.
Mix the remaining ingredients in a small bowl, and then sprinkle over the noodles.
Bake 15 minutes at 400 degrees.
