Recipe Story

This is a good, healthy dinner that allows the family to have their "rainbow" of veggies. My good friend Jamie has a beautiful daughter who was born with CF. Jamie and her daughter show us how strong and wonderful they are. This recipe is for them and to help others with CF.

Ingredients

  • 1 lb ground beef or ground turkey
  • 2 green peppers
  • 4 russet potatoes
  • 3 carrots
  • 16 oz elbow noodles
  • 36 oz tomato sauce
  • Salt
  • Pepper
  • Garlic powder
  • Basil
  • Add All Ingredients

Directions

  1. In one pot, cook the elbows until tender but firm.

  2. In the other pot, put in the tomato sauce and go ahead and add your spices (make a judgment call on how much salt, pepper, garlic powder and basil).

  3. Cut up the green pepper, potatoes, and carrots in small cubed or small diced pieces.

  4. Add the vegetables to the sauce mixture and let cook until carrots and potatoes are soft.

  5. While that is cooking, in a sauté pan, cook the ground turkey or ground beef until no longer pink.

  6. After that is cooked, drain and add meat to the sauce mixture.

  7. Once the veggies are cooked through, add the sauce mixture to the cooked elbows and mix thoroughly. Then apache stew is ready to serve.

TIPS/NOTES

You will need two large stock pots and a sauté pan.
