Tasty Scalloped Potatoes By: Ann R.
Potatoes were loved by everyone in our family and especially by our son who had CF. He could always eat two servings of these potatoes, which helped him maintain his weight and health.
- 10 large baking potatoes, peeled
- 1/2 tsp salt
- 2 c whipping cream
- 1/2 c melted unsalted butter
- 1/2 c grated cheddar cheese
- 1 tsp pepper
- Add All Ingredients
- Prep Time: 1 hour
- Cook Time: 25 minutes
Peel potatoes and slice 1/4 inch crosswise. Drop in water to prevent browning.
Heat pot of water and add drained potato slices. Cook to precooked stage and drain immediately.
Place potatoes into a 9"x13" oil sprayed baking dish or pan.
Sprinkle with salt and pepper. Pour whipping cream over potatoes.
Pour melted butter and cheese over potatoes.
Bake at 425 degrees in oven until the potatoes are lightly brown on top.
