Cold Pea Salad w/ Wasabi By: Darrell B.

Recipe Story

Our son has CF and trained to be a chef. After working seven years at Google with Bon Appetit' who contracts there, he's moved on to COSTCO where he supervises the meat department, ordering, packaging and cooking the food sold in one of their stores. This pea salad is a family favorite. Adjust the heat of that last ingredient to taste, particularly if serving to children.

Ingredients

  • Butter or Bibb lettuce
  • 20 oz frozen peas
  • 2 stalks celery
  • 2 carrots
  • 4-5 pieces bacon
  • 1/2 c walnuts or cashews
  • 1/2 c sour cream
  • 1 tsp basil or herbs de Provence
  • 2 small green onions
  • Pinch salt
  • Pinch pepper
  • Pinch wasabi paste
  • Add All Ingredients

Directions

  1. Fry the bacon in a pan until crisp, remove and place on paper towels.

  2. Defrost the peas, rinse, getting rid of any excess moisture. Cut carrots and celery lengthwise, then cross-cut into pieces no larger than the peas.

  3. Chop the nuts and spring onions into small bite-sized pieces.

  4. Combine all in a bowl.

  5. Add spices to the sour cream and mix with a pinch of Wasabi paste or horseradish. Taste and adjust amount before adding to the salad.

  6. Finally, cut bacon into small pieces; mix all together and serve over a leaf or two of butter lettuce.
