Easy Chicken Taquitos By: Emma C.

I have 2 young-adult kids with cystic fibrosis with very healthy appetites. Over the years my homemade beef or chicken taquitos have always been a hit, and they are even good cold out of the fridge for late-night snacks. But seriously, we even eat them for breakfast as a grab-n-go meal. I put any leftovers in a gallon Ziploc and they don't last long! To change up this recipe, simply substitute a 12 oz. can of Libby's (preferred brand) Roast Beef for the Chicken, and use Lawry's Beef Taco Seasoning in place of the Chicken Taco Seasoning. Use all of the gravy that comes in the can for the beef taquitos, though. Leftover chicken or roast beef can be used in place of canned, but you'll need some liquid (water or broth) to add to the mixture.
Ingredients
- 12 oz can of white chicken meat
- 2 pkg Lawry's chicken taco seasoning
- 12-15 corn tortillas
- Cooking Oil

Directions
- Prep Time: 5 minutes
- Cook Time: 20 minutes
Place about a dozen corn tortillas on a small plate, cover with a damp paper towel and microwave for 1 minute to steam them until soft enough to roll without breaking.
Open can of chicken and drain liquid into a small bowl, reserving for later.
Put the chicken meat into a small mixing bowl and using a fork, shred the chicken.
Add the envelopes of taco seasoning, and enough of the reserved liquid to make it juicy but not overly wet (when frying in hot oil, the extra liquid will tend to splatter).
Heat cooking oil over med-high heat in a large fry pan.
Remove the damp paper towel from the corn tortillas. Take the first tortilla, add 1 1/2 tablespoons of the meat mixture spread across one end of the tortilla and roll up into a "cigar."
Place this taquito seam-side down into the hot oil. Continue with this process until your fry pan is full.
Check the taquitos to see that they are browning and that the seam has sealed itself. When the risk of the taquitos unrolling is past, turn the taquitos in the pan and lightly brown on the other side.
Remove to a dry paper towel to absorb the excess oil, and lightly salt while they are still "wet."
