Zucchini Bread Recipe for Those with a Plethora of Zucchinis! By: Natasha W.

Recipe Story

My friend Devin, who has CF, is over right now. We played some soccer this morning and stopped early because he is recovering from surgery. He is currently sleeping and I am going to make my special zucchini bread recipe with the zucchinis from our garden while he naps.

Ingredients

  • 1 3/4 c whole wheat flour
  • 2/3 c sugar
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 3 eggs
  • 2 1/2 c grated zucchini
  • 1/4 c olive oil
  • 1/4 c walnuts
  • 1 tsp vanilla
  • Add All Ingredients

Directions

  1. Preheat oven to 350 degrees F.

  2. Mix dry ingredients.

  3. Mix wet ingredients.

  4. Mix them together.

  5. Pour batter into a greased bread tin.

  6. Cook for about 45 minutes or until toothpick comes out clean.
