Recipe Story

This was my favorite cake as a child. The recipe for "Harriet's Chocolate Frosting for Banana Cake” can also be found on this website.

Ingredients

  • 1 1/2 c white sugar
  • 2/3 c butter, softened
  • 3 Tbsp milk
  • 1 Tbsp vinegar
  • 2 eggs, large
  • 2 c white flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 c chocolate chips
  • 1 c bananas (ripe)
  • 1 tsp vanilla
  • Add All Ingredients

Directions

  1. Pre-heat oven to 350 degrees.

  2. In a large bowl, cream together the white sugar and the softened butter.

  3. In a small bowl, combine the milk and vinegar to produce sour milk.

  4. Stir the vanilla and sour milk (milk/vinegar mixture) into the sugar/butter mixture.

  5. Whisk together the two eggs, then stir into the large bowl.

  6. In a second large bowl, mix the following dry ingredients: white flour, baking soda, salt. Whisk together thoroughly

  7. Add wet ingredients to dry mixture and stir to moisten. Do not overmix.

  8. Add 1 cup of thoroughly mashed ripe banana (about 3 small or 2 large). Mix slightly to combine.

  9. Add 1 cup chocolate chips.

  10. Stir to combine all ingredients, but do not overmix. There should be some lumps in the batter.

  11. Pour batter into 9 x 13 greased/floured pan and bake for 25 - 30 minutes in a pre-heated 350 degree oven. Test for doneness.

  12. Let cake cool completely before frosting with Harriet's Chocolate Frosting (recipe is separate).
