Mediterranean Baked Salmon By: Bridget B.
Recipe Story
My daughter Lucy, who is 25 years old, has cystic fibrosis. She loves this recipe and it is very healthy for those with CF as it is high in omega-3's which help reduce inflammation.
Ingredients
- 2 red onions
- 3 minced garlic cloves
- 3 Tbsp olive oil
- 25 pitted black olives
- 2 Tbsp capers
- 1 tsp chopped fresh thyme
- 1 tsp salt
- 1 tsp fresh ground black pepper
- 8 skinless, boneless salmon fillets
- Add All Ingredients
Directions
- Prep Time: 20 minutes
- Cook Time: 10 minutes
Sauté the onion and garlic in olive oil for 1 minute until soft.
Add the remaining ingredients except salmon, and sauté for 2 more minutes on high heat. Cool; the sauce may be refrigerated and stored for up to 5 days.
Preheat the oven to 450 degrees.
Place the salmon fillets in a large baking dish and spread evenly with sauce.
Bake for 7 to 10 minutes, or until the fish is slightly less than firm when pressed.
Serve immediately.
