Southwest Surprise Casserole By: Ann R.
Recipe Story
Our family likes this casserole because the flavors are so rich. Our CF son would often eat two servings during one meal. I liked this casserole because I could make it ahead of time and bake it just before dinner.
Ingredients
- 1 lb lean ground beef
- 1 yellow onion, chopped
- 1 green sweet pepper, chopped
- 1 c chili powder
- 1 c tomato sauce
- 2 eggs, beaten
- 1 c light cream
- 16 oz package corn chips
- 1/2 c jack cheese, grated
- 1 c sour cream
- 1 c cheddar cheese, grated
- Add All Ingredients
Directions
- Prep Time: 20 minutes
- Cook Time: 30 minutes
Combine beef, onion, green pepper, chili powder and tomato sauce in a pan.
Simmer 5 minutes.
Add eggs and mix slowly.
In a one quart casserole dish, place corn chips in bottom. Top with half the meat mixture, then the jack cheese.
Repeat layering. Top with sour cream and cheddar cheese.
Bake at 325 degrees for 25-30 minutes.
