Coconut Lentils Soup

Ingredients
- 1 Tbsp olive oil
- 1 onion
- 1 Tbsp fresh ginger
- 2 Tbsp curry powder
- 2 Tbsp garlic cloves
- 4 c chicken broth
- 1 c coconut milk
- 1 c crushed tomatoes
- 2 c red lentils
- 1/2 c golden raisins
- 1 Tbsp turmeric
- 1 c sliced carrots
- Add All Ingredients
Instructions
Step 1
In a pot, heat oil over medium heat and fry the onion, garlic, ginger and spices until the onion is translucent.
Step 2
Add the broth, coconut milk, carrots, crushed tomatoes and lentils.
Step 3
Cover and bring to a boil, then simmer on low heat for 25-35 minutes, until the lentils are very tender.
Step 4
Before serving, stir in golden raisins.
