Coconut Lentils Soup

I know someone suffering from CF and I want to see more support and research for CF. I like this recipe because it is healthy, easy and yummy.

Ingredients

  • 1 Tbsp olive oil
  • 1 onion
  • 1 Tbsp fresh ginger
  • 2 Tbsp curry powder
  • 2 Tbsp garlic cloves
  • 4 c chicken broth
  • 1 c coconut milk
  • 1 c crushed tomatoes
  • 2 c red lentils
  • 1/2 c golden raisins
  • 1 Tbsp turmeric
  • 1 c sliced carrots
  • Add All Ingredients

Instructions

Step 1
In a pot, heat oil over medium heat and fry the onion, garlic, ginger and spices until the onion is translucent.

Step 2
Add the broth, coconut milk, carrots, crushed tomatoes and lentils.

Step 3
Cover and bring to a boil, then simmer on low heat for 25-35 minutes, until the lentils are very tender.

Step 4
Before serving, stir in golden raisins.
