Sweet Potato Casserole By: Ann R.
Recipe Story
This recipe can easily be doubled. I always doubled it for our family as our son who has CF wanted to eat at least two servings. This is also a good dish to serve at Thanksgiving with ham or turkey. Undoubtedly this sweet potato casserole is the best dish made from a can!
Ingredients
- 29 oz canned sweet potatoes
- 1/2 stick(s) unsalted butter
- 3/4 c sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 1/2 tsp nutmeg
- 1 egg, beaten
- 3/4 c cornflakes
- 1/2 c chopped nuts
- 1 stick(s) butter, melted
- 1/2 c brown sugar
- Add All Ingredients
Directions
- Prep Time: 15 minutes
- Cook Time: 30 minutes
Warm potatoes in own syrup and mash to a very smooth consistency in the mixer or food processor.
Add melted butter, sugar, cinnamon, nutmeg and eggs. Mix well.
Place in a 2 quart casserole dish.
Bake at 400 degrees, uncovered for 20 minutes.
Mix topping ingredients; spread over potatoes and brown for 10 minutes.
