WHAM CFs Pumpkin Muffins By: Wendy R.
Recipe Story
I have two wonderful kids who happen to have CF. This recipe is one that my daughter and I like to bake together. She only likes the muffins when they are hot right out of the oven, and my son likes them the next day when they are a little bit sticky.
Ingredients
- 1/2 c canola oil
- 1 1/2 c white or brown sugar
- 2 eggs
- 1 1/2 can(s) pumpkin
- 1/2 tsp baking powder
- 1 1/2 c all-purpose flour
- 1 tsp baking soda
- 2 tsp vanilla
- 10 tsp pumpkin pie spice
- 1/2 c chopped walnuts (optional)
- Add All Ingredients
Directions
Mix the eggs, sugar, oil, vanilla and pumpkin together.
Add the dry ingredients together and then add them to the pumpkin mixture and stir well.
Add nuts when the mixture is complete.
Portion muffin batter into baking pan.
Bake in a 325 degree oven, usually 12-15 minutes for muffins.
