Banana Muffins

Our son who has CF loves these nutritious snack muffins that are so healthy. It was a favorite after school snack for him and his friends who are always hungry.

Ingredients

  • 3 fl oz frozen orange juice concentrate
  • 2 ripe bananas, mashed
  • 2 large eggs
  • 1/4 c vegetable oil
  • 2 Tbsp honey
  • 1 tsp ground cinnamon
  • 1 tsp ground all-spice
  • 2 c biscuit mix
  • 3/4 c raisins
  • Add All Ingredients

Instructions

Prep Time: 20 minutes
Cook Time: 20 minutes

Step 1
Preheat oven to 400 degrees.

Step 2
Combine juice, bananas, eggs, oil, honey and seasonings in a large mixing bowl.

Step 3
Beat with hand mixer until light and fluffy.

Step 4
Fold in biscuit mix and raisins.

Step 5
Stir until dry ingredients and moistened.

Step 6
Fill greased or lined muffin cups, 3/4 full.

Step 7
Bake for 20 minutes.
