Fluffy Potato Casserole
Heard about this through my grandnephew’s girlfriend, Anna. Always willing to pass on good tasting recipes! A woman whose husband I was a caregiver for gave me this recipe... ENJOY! :-)

Ingredients
- 2 c mashed potatoes (hot or cold)
- 8 oz cream cheese
- 1 onion, small finely chopped
- 2 eggs
- 1 Tbsp flour
- Salt and pepper (to taste)
- 3 oz French-fried onions
- Add All Ingredients
Instructions
Step 1
Mix all ingredients, except for the fried onions.
Step 2
Baked uncovered in buttered large casserole dish, at 350 degrees F, for 35 minutes.
Step 3
Top with French-fried onions.
