Recipe Story
Our daughter Debbie had CF and needed to gain some weight. Everything we tried to feed her either she wasn’t hungry or she didn’t like it. Then I made this pumpkin bread, and she loved it. It was gone in two days and from then on it was Debbie’s pumpkin bread and a family tradition.
Ingredients
- 4 eggs
- 1 c vegetable oil
- 3 c sugar
- 3 1/2 c flour
- 1 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp nutmeg
- 2 tsp baking soda
- 2 - 3 c lukewarm water
- 1 can(s) pumpkin
- 1 c raisins
- 1 c chopped walnuts
- Add All Ingredients
Directions
- Prep Time: 15 minutes
- Cook Time: 1 hour
Dissolve baking soda in lukewarm water; set aside.
Mix eggs with vegetable oil.
Add sugar, salt, cinnamon and nutmeg; mix.
Add water and baking soda mixture, alternating with flour.
Add pumpkin, raisins and nuts.
Pour into two regular bread pans sprayed with Pam.
Bake at 350 degrees for 1 hour.
