Healthy Heart-Warming High-Protein Miso Soup By: Rin G.
Recipe Story
I was born in Japan, so I grew up drinking lots and lots of miso soup. It's a very comforting and warming soup, full of nutrients and high in protein (especially if you add the tofu). We have one niece on my husband's side of the family with CF, and many CF gene carriers. I hope this simple recipe brings you comfort, as well as making it easy to increase your protein intake.
Ingredients
- 3 Tbsp Miso paste
- 1 pkg tofu
- 2 Tbsp finely chopped scallions
- 2 c water
- 1 tsp dashi stock powder (available from Asian food stores)
- Add All Ingredients
Directions
Bring water to boil in a saucepan and add tofu and dashi stock powder.
Take saucepan off the heat, mix in miso paste.
Serve in small bowls with finely chopped scallions.
