Zucchini Muffins By: Heidi P.
Recipe Story
My three-year-old son, Owen, has cystic fibrosis. We try to make meal time fun. This is an old family recipe that puts our garden veggies to good use. We still use apple sauce in lieu of butter because the finished consistency is better. Zucchini can be shredded and frozen to make the muffins any time or the muffins can be frozen once they are complete. Hope you enjoy these!
Ingredients
- 1 c apple sauce
- 2 c sugar
- 3 eggs
- 3 tsp vanilla extract
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp nutmeg
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 2 c grated zucchini
- 2.75 c flour
- 1 c pulverized walnuts
- 1 c chocolate morsels
- 1 muffin pan - we use dinosaur and car shape muffin tins because muffins shaped like dinosaurs taste better
- Add All Ingredients
Directions
Mix apple sauce, sugar and eggs.
Add vanilla extract, salt, baking soda, nutmeg, baking powder and cinnamon.
Mix thoroughly.
Mix in flour.
Mix in zucchini and walnut powder.
Add chocolate.
Pour into greased muffin tins. Bake for 35-45 minutes at 350 degrees.
When toothpick comes out dry it is done! Serve warm with lots of butter.
