Ingredients

  • 1/2 lb raw peeled shrimp
  • 1 egg white
  • 1 Tbsp cornstarch
  • 1/4 lemon
  • 1 Tbsp condensed milk
  • 1 Tbsp mayonnaise
  • 2 oz spinach
  • 10 pineapple chunks
  • 2 c vegetable oil (for frying)
  • Salt and pepper to taste
  • 1/4 c candied walnuts
  • add cilantro and/or sesame to garnish (optional)

Instructions

Step 1
Dip shrimp in egg white.

Step 2
Mix salt and pepper in the cornstarch.

Step 3
Coat shrimp with cornstarch mixture, shake off excess cornstarch.

Step 4
Heat oil in a pan to 350 degrees and individually fry the shrimp to golden brown.

Step 5
Remove shrimp and set aside.

Step 6
In a separate bowl, mix lemon, condensed milk and mayonnaise to make sauce.

Step 7
Now add shrimp and pineapple to sauce and toss to coat.

Step 8
Plate on a bed of spinach, top with walnuts and serve.
