Recipe Story
This recipe is a favorite of the Fredrick Family, whose strength and poise inspire many.
Ingredients
- 1/2 lb raw peeled shrimp
- 1 egg white
- 1 Tbsp cornstarch
- 1/4 lemon
- 1 Tbsp condensed milk
- 1 Tbsp mayonnaise
- 2 oz spinach
- 10 pineapple chunks
- 2 c vegetable oil (for frying)
- Salt and pepper to taste
- 1/4 c candied walnuts
- add cilantro and/or sesame to garnish (optional)
- Add All Ingredients
Directions
Dip shrimp in egg white.
Mix salt and pepper in the cornstarch.
Coat shrimp with cornstarch mixture, shake off excess cornstarch.
Heat oil in a pan to 350 degrees and individually fry the shrimp to golden brown.
Remove shrimp and set aside.
In a separate bowl, mix lemon, condensed milk and mayonnaise to make sauce.
Now add shrimp and pineapple to sauce and toss to coat.
Plate on a bed of spinach, top with walnuts and serve.
