Zucchini Soup in a Crock Pot By: Linda H.
Recipe Story
Our granddaughter was diagnosed with CF at three weeks old. She is three and a half years old and is doing very well. We participate in the area walk every year and one just for her in our home town. I grow zucchini and this is a tasty way to cook it.
Ingredients
- 1 1/2 lb Italian sausage
- 1 1/2 c celery
- 1 1/2 lb zucchini
- 56 oz canned diced tomatoes
- 1 bell pepper, chopped
- 1 onion, chopped
- Salt to taste
- 1 tsp white sugar
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp garlic powder
- Parmesan cheese for garnish
- Add All Ingredients
Directions
Cook sausage until browned; discard grease.
Mix celery into cooked sausage, cook about 10 minutes.
Combine sausage and celery with the remaining ingredients.
Cook on low in crock pot for 4-6 hours.
Garnish each serving with parmesan cheese.
