Recipe Story
This recipe is a favorite with our kids as it is so delicious and healthy. Our son who has CF could eat two servings by himself!
Ingredients
- 1 lb asparagus, trimmed
- 2 large eggs, lightly beaten
- 2 c all-purpose flour
- 3/4 c whole wheat panko breadcrumbs
- 1/2 c grated parmesan cheese
- Salt and pepper to taste
- Add All Ingredients
Directions
- Prep Time: 20 minutes
- Cook Time: 7 - 12 minutes
Preheat oven to 425 degrees.
Wash and dry asparagus on a towel.
Dredge the asparagus in flour.
In a separate bowl, mix panko breadcrumbs, parmesan, salt and pepper.
Dip asparagus in the egg, then in the breadcrumb mixture.
Place asparagus on a wire rack on a baking sheet.
Bake until golden brown, about 7-12 minutes.
