SKORPA (Swedish Rusks)

This is a family recipe we used for the holidays although we could eat it all the time. Especially wonderful at Christmas and is our tradition. Our daughter had CF and went through 2 double lung transplants. This recipe was a favorite of hers.

Ingredients

  • 2 c sugar
  • 8 Tbsp melted butter
  • 2 c buttermilk
  • 1 egg
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 c chopped black walnuts
  • 4 c wheat flour
  • 2 tsp vanilla
  • Add All Ingredients

Instructions

Step 1
Mix sugar, shortening and egg. Set aside.

Step 2
Sift soda, salt and flour.

Step 3
Add dry ingredients alternating with buttermilk.

Step 4
Add vanilla and black walnuts.

Step 5
Bake as a cake in a 9 x 13 inch pan.

Step 6
After cooling a short time after baking cut strips of about 2 1/2 x 1 inch.

Step 7
Place bars on a cookie sheet allowing air to circulate between bars in a warm oven 150 degrees to 200 degrees until dry and hard.
