Artichoke Squares (frittata) By: Darrell B.
Recipe Story
Our adult son Joe has CF and is doing well. This is a family favorite snack. We ofter double the recipe and make two batches. They are good warm, a few minutes out of the oven, at room temperature or even cold.
Ingredients
- 4 eggs
- 1/4 c fine dry bread crumbs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 3/4 c finely chopped white onion
- 2 other Tabasco sauce
- 1 minced garlic clove
- 2 Tbsp butter
- 2 c shredded cheddar
- 12 oz marinated artichoke hearts
- Add All Ingredients
Directions
Beat the four eggs in a bowl and combine with the dry ingredients and the Tabasco sauce. In the meantime, sauté the onion and garlic in the butter (5-7 min.)
Drain the artichoke hearts. Cut up the artichoke hearts and combine with the cheddar cheese.
When the sauté pan has cooled a bit, combine all the ingredients and place in a 9"X9" greased Pyrex baking pan.
Bake as directed above.
Cut into one-inch squares.
