Grandma Ruth's German Potato Salad By: Carole B.

Recipe Story

My grandmother made the best German potato salad I have ever eaten. It is always a special treat for me to make it for my family and others. It is a great dish to prepare ahead, and you can freeze the leftovers!

Ingredients

  • 3 lb raw white potatoes
  • 1/2-3/4 c diced celery
  • 1 medium onion, diced
  • 1/2 lb bacon, cooked and diced
  • 1 c sugar
  • Salt and pepper to taste
  • 1 c vinegar
  • 1 c less 2 tbsp water
  • 1 Tbsp flour
  • Add All Ingredients

Directions

  1. Boil potatoes until cooked through.

  2. Cook bacon and 1 tablespoon of onion (do not discard bacon drippings).

  3. Cool potatoes, peel, and slice.

  4. Create a single layer of potatoes in a large bowl or container.

  5. Sprinkle salt, pepper, onion, celery and bacon on top of potatoes.

  6. Continue layering potatoes and toppings until all of the potatoes are used.

  7. Add flour to bacon drippings.

  8. Stir sugar, vinegar and water into the bacon drippings.

  9. Boil this mixture until it is clear, stirring it as it thickens.

  10. Pour potato sauce over layered potatoes.

  11. Toss potatoes from one container to another until all potatoes are coated with sauce.

  12. Sprinkle with parsley.

  13. Potato salad can be served warm or cold.
