Bacon Cheeseburger Soup By: Cindy K.
Recipe Story
Several members of my family and my new husband's family have CF; they are beautiful, delightful, and exceptionally intelligent. The recipe is one a friend started making about 25 years ago in a restaurant I managed. It sounds crazy, but it's delicious.
Ingredients
- 1 1/2 lb ground beef
- 8 oz bacon, cooked, fat reserved
- 1/2 c diced onion
- 1/2 c diced tomato
- 1 c beef broth
- 1 c heavy cream
- 1 lb shredded cheddar
- 1/4 c minced dill or sweet pickle
- 2 Tbsp ketchup
- 2 tsp prepared mustard
- 1/4 tsp black pepper
- 2 Tbsp flour
- Add All Ingredients
Directions
Cook the bacon until crisp, set aside, reserve 1/4 cup fat.
Brown the ground beef, drain and discard fat.
Sauté onion in bacon grease till translucent.
Stir in flour and cook a minute to make a roux.
Whisk in broth slowly, then add cream.
Bring to simmer, add back the drained ground beef.
Add chopped tomato, ketchup, and mustard.
Season with pepper.
Simmer gently about 20 minutes.
Stir in shredded cheese over very low heat just until melted.
Add chopped pickle for garnish.
Crumble the bacon back in.
Serve with crusty bread.
