Great Aunt Sarah's Chicken and Dumplings By: DJ K.
Recipe Story
My best friend's brother had CF which inspired me to go into nursing specifically to care for people with CF. Since 1976 I have been caring for people with CF and have made many wonderful friends throughout the CF community. This is my favorite childhood comfort food dish. My mom's Aunt Sarah taught my mom to make this and my mom taught me. It is really good on cold winter days and sticks to your ribs.
Ingredients
- 1 whole chicken
- 1 whole egg
- 1/4 c vegetable oil
- 1/2 c milk
- 1 c flour
- Salt and pepper to taste
- Add All Ingredients
Directions
Fill a large pot with water to cover one whole chicken. Salt and pepper to taste.
Bring to a boil and boil until chicken is falling off bone.
Remove from heat, allow to cool and shred chicken into bite-sized pieces. Remove the bones from the chicken stock.
Reserve the chicken stock.
While chicken is cooking, fill a one cup sized measuring cup with 1/4 cup vegetable oil, one whole egg and fill to the 8-ounce mark with milk.
Combine with flour to make dough. Add more flour as needed until dough is not wet and sticky.
On a floured surface, roll out dough until very thin.
Cut dough into strips then cut strips into one-inch pieces.
Add the shredded chicken back into the chicken stock, add in the dough pieces and bring back to a boil.
Cook until the dumplings are tender and broth is thick (should not be watery).
