Quiche Lorraine

My 23-month-old daughter, Madison, was diagnosed with CF at birth. She is an amazing little girl and a born fighter. We have been very blessed that she has not had any respiratory issues related to CF, but she struggles greatly with digestion issues and gaining weight.

Ingredients

  • 1 homemade or store bought pie crust
  • 6 slices of bacon
  • 1 medium onion, sliced
  • 3 eggs, beaten
  • 1 1/2 c milk
  • 1/4 tsp salt
  • 2 tsp ground nutmeg
  • 1 1/2 c shredded Swiss cheese
  • 1 Tbsp all-purpose flour

Instructions

Prep Time: 20 minutes
Cook Time: 35 minutes

Step 1
Prepare pastry for single-crust pie using your favorite recipe or follow the directions on a store-bought crust.

Step 2
In a large skillet cook bacon till crisp. Drain, reserving 2 tablespoons drippings.

Step 3
Crumble bacon; set aside.

Step 4
Cook sliced onion in reserved drippings till tender but not brown; drain.

Step 5
In a medium mixing bowl stir together eggs, milk, salt and a dash of nutmeg.

Step 6
Stir in the crumbled bacon and onion.

Step 7
Toss together shredded cheese and flour. Add to egg mixture; mix well.

Step 8
Pour egg mixture into the hot, baked pastry shell.

Step 9
Bake in the 325 degree oven for 35 minutes or until a knife inserted near the center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning.

Step 10
Let stand 10 minutes before serving.
