Surimi Cold Salad
I lost one wonderful nephew, at the age of 26, to CF. His brother, another wonderful nephew, is now 44 and also has CF. Three months after the death his brother, my nephew became the father of twins who are now 12 years old. Our family has been both blessed and devastated by this disease. My recipe does not have a particular story but my husband and I both like it!

Ingredients
- 16 oz surimi (imitation crab)
- 4 oz low-fat or regular mayonnaise
- 4 Tbsp celery, chopped
- 3 Tbsp green onion, chopped
- 1 c tomato, cubed
- 1 c low-fat or full-fat mozzarella cheese
- 1 Tbsp red wine vinegar or lemon juice
- Add All Ingredients
Instructions
Prep Time: 15-20 minutes
Step 1
Cube surimi into inch-sized portions.
Step 2
Cube tomatoes and mozzarella cheese into 1/2 inch cubes.
Step 3
Place all in large bowl and add chopped celery and green onion.
Step 4
In a small bowl, mix mayonnaise and vinegar together and fold into crab mixture.
Step 5
Serve on lettuce leaves.
