Recipe Story

I was diagnosed with cystic fibrosis back in 1983 and grew up eating the typical "CF Diet" full of unhealthy fats and sugars. A few years ago, I decided to take my health by the horns. I started running half marathons, went on biking adventures, started yoga and most importantly changed the way I ate. Oatmeal is a perfect way to start the day and I eat it just about every morning. I've teamed my perfect oats up with a variety of healthy fats, proteins, fiber, calcium, omega-s and vitamins to get my day started out right. This is one of my favorite ways to spice up what most people see as boring old oatmeal!

Ingredients

  • 1 c cooked oatmeal
  • 1/2 tsp cinnmaon
  • 2 Tbsp ground flax seed
  • 1 c plain Greek yogurt
  • 1/2 c granola
  • 1 c blueberries, raspberries and strawberries
  • 1/4 c almonds
  • 2 Tbsp local honey to drizzle
  • Add All Ingredients

Directions

  1. Stir cinnamon and flax seed into prepared oats.

  2. Divide between two bowls.

  3. Divide almonds and top oats.

  4. Add 1/4 of the berries to each bowl.

  5. Layer Greek yogurt on top of berries.

  6. Drizzle honey on yogurt.

  7. Add divided Granola then finish off with remaining berries.
