Whole Wheat Zucchini Fritters By: Chris B.

Recipe Story

My son has CF; developed recipe to use abundance of zucchini and leeks.

Ingredients

  • 1 zucchini, about 10 inches
  • 1 large egg
  • 1/2 c chopped onion
  • 1 leek, white & light green part
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 large garlic clove
  • 1/2 c whole wheat flour
  • Salt & pepper to taste
  • 1/4 c asiago cheese
  • 1/4 c parmesan cheese
  • 4 Tbsp oil
  • Add All Ingredients

Directions

  1. Grate zucchini and squeeze in paper towel to remove excess moisture (you should have about 1 cup).

  2. Fry leeks and onion together in oil and butter at a low temperature until soft. Add to zucchini.

  3. Grate clove of garlic with small grater and add to vegetables (if you like more garlic, use 2 cloves).

  4. Grate cheese and add to bowl of vegetables. Salt & pepper to taste.

  5. Beat egg and add whole wheat flour (you can use 1/4 cup white flour and 1/4 cup whole wheat flour if you wish). Add to vegetables and mix.

  6. Heat oil in pan.

  7. Drop in about 1 tbsp of batter and flatten. Fry until browned and then flip and fry on other side.
