My son has CF; developed recipe to use abundance of zucchini and leeks.
- 1 zucchini, about 10 inches
- 1 large egg
- 1/2 c chopped onion
- 1 leek, white & light green part
- 1 Tbsp olive oil
- 1 Tbsp butter
- 1 large garlic clove
- 1/2 c whole wheat flour
- Salt & pepper to taste
- 1/4 c asiago cheese
- 1/4 c parmesan cheese
- 4 Tbsp oil
- Add All Ingredients
Grate zucchini and squeeze in paper towel to remove excess moisture (you should have about 1 cup).
Fry leeks and onion together in oil and butter at a low temperature until soft. Add to zucchini.
Grate clove of garlic with small grater and add to vegetables (if you like more garlic, use 2 cloves).
Grate cheese and add to bowl of vegetables. Salt & pepper to taste.
Beat egg and add whole wheat flour (you can use 1/4 cup white flour and 1/4 cup whole wheat flour if you wish). Add to vegetables and mix.
Heat oil in pan.
Drop in about 1 tbsp of batter and flatten. Fry until browned and then flip and fry on other side.
