Recipe Story
My cousin's baby has CF. This recipe was always a favorite with children and adults in our family. It is high in protein, and it also "hides" the vegetables for those who will not eat them otherwise.
Ingredients
- 1 lb ground beef or your favorite meatloaf mix
- 5 eggs
- 1 potato (small)
- 1 carrot
- onion (small)
- 5 garlic cloves
- 1 tsp salt
- 2 g pepper
- Add All Ingredients
Directions
Hard boil 4 of the eggs (start with eggs in tap water, cook for ~10 minutes from moment water starts boiling).
Cool and peel eggs.
Grind the potato, carrot, onion and garlic, add one egg, salt, pepper and the ground beef or your favorite meatloaf mix recipe.
In an oiled loaf pan, spread 1/3 meat mix, then arrange eggs in a line (touching each other) in the middle of the pan.
Cover with remaining meat mix, so eggs are hidden.
Bake for 1 hour on medium (350 degrees).
When cutting the meatloaf, there is a "Cyclops' eye" in every slice.
