Baked Salmon with Wine and Lemon Juice By: Ann R.

Recipe Story

I am the mother of a healthy man who has CF and weighs 180 pounds. He has always been a good eater and loves salmon prepared using this simple method. He often eats two or three servings of this salmon at one meal.

Ingredients

  • 1 1/2 lb wild salmon fillet
  • 3/4 c dry white wine
  • 1/2 c lemon juice
  • 1 Tbsp unsalted butter
  • 2 Tbsp canned capers
  • 1/2 c chopped green onion tops
  • 1 Tbsp paprika
  • Add All Ingredients

Directions

  • Prep Time: 15 minutes

  1. Preheat oven to 350 degrees.

  2. Wash salmon fillet and put in a Pyrex baking pan.

  3. Pour white wine over the entire fish.

  4. Pour lemon juice over the entire fish.

  5. Cut thin pats of butter and distribute 2 inches apart over the fish.

  6. Sprinkle capers over the entire fish.

  7. Sprinkle chopped green onions over the fish.

  8. Sprinkle paprika over the fish.

  9. Place uncovered pan in preheated oven and bake for 18-20 minutes depending on the thickness of the fish.
