Recipe Story

I am a carrier; my daughter has CF. I made many of these cupcakes with white buttercream frosting and chocolate frosting for my daughter’s best friend’s wedding reception. My daughter and Betsy had known each other since elementary school; my daughter was in the wedding party. Betsy specifically asked for these cupcakes.

Ingredients

  • 1/2 c unsalted butter, softened
  • 1 c white granulated sugar
  • 2 large eggs
  • 2 1/2 tsp vanilla extract
  • 1 1/2 c white all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 c cold whole milk
  • Add All Ingredients

Directions

  • Prep Time: 30 minutes
  • Cook Time: 18 - 24 minutes

  1. Preheat oven to 350 degrees.

  2. In large bowl, with electric mixer: cream butter and sugar until creamy and fluffy.

  3. Add eggs, 1 at a time, beating until barely mixed in.

  4. Add vanilla, mix on low for 30 seconds.

  5. In smaller bowl, whisk together all the dry ingredients.

  6. Add to butter mixture, beat on medium 30 seconds.

  7. Add all the milk, pouring in while mixer is on low.

  8. Mix until ingredients all come together. Do not over mix.

  9. Put batter into cupcake liners in muffin pan. Fill to 2/3 full.

  10. Bake for 18-24 minutes, until golden on top and toothpick comes out clean. Do not over bake.

  11. Frost with your favorite frosting, or sprinkle with powdered sugar, or eat as is.
