Recipe Story

We have a relative by marriage that has CF. This is a recipe that she likes.

Ingredients

  • 2 c chopped onions
  • 2 Tbsp butter
  • 10 oz package of frozen spinach, cooked and drained
  • 2 1/2 diced jalapeno peppers
  • 1 pt sour cream
  • 4 green onion tops, chopped
  • 2 tsp salt
  • 12 oz plain tortilla chips
  • 6 c chicken, cooked and chopped
  • 1 c grated cheddar cheese
  • 1 c grated Monterey jack cheese
  • 20 oz cream of mushroom soup
  • Add All Ingredients

Directions

  1. Sauté onion in butter.

  2. Blend in spinach, peppers, sour cream, soup, onion tops and salt.

  3. Mix cheese together in a bowl.

  4. In a 9x12 in. pan, alternate layers of tortilla chips, chicken, spinach mixture, cheese mixture.

  5. Repeat.

  6. Bake at 350 degrees for 30 minutes.

TIPS/NOTES

You can use canned jalapenos instead of fresh jalapenos, adjust quantity to suit your liking.
