Loaded Honey Mustard Chicken

My cousins Taylor and Brian were diagnosed as kids with Cystic Fibrosis. After doing family research, I believe CF was the reason for some of my ancestors’ dying very young and unexpectedly. My cousins use their illness to motivate and help others. They are very active children and play many sports as well as live life to the fullest. Currently the eldest is serving a two-year LDS mission. He is constantly putting others' needs above his own. They are truly inspiring and amaze me.

Ingredients

  • 4 boneless chicken breasts
  • 1/2 c honey
  • 1/2 c Grey Poupon Dijon mustard
  • 8 strips bacon
  • 1 pkg fresh mushrooms
  • 2 tsp paprika
  • 1 c Monterey jack cheese
  • 1 Tbsp olive oil
  • Add All Ingredients

Instructions

Prep Time: 15 minutes
Cook Time: 2 hours 30 minutes

Step 1
Mix olive oil, mustard, and honey in bowl. Pour into large Ziploc bag with chicken. Marinate 2 hours.

Step 2
Place marinated chicken into frying pan. Brown both sides. Sprinkle with paprika. Cook on medium high heat for 10-15 minutes until cooked through. While the chicken is cooking, preheat oven to 350 degrees F.

Step 3
While chicken is cooking, sauté mushrooms and cook bacon in separate pans.

Step 4
When chicken is done, place it in an oven-safe pan and top with 2 strips of bacon and mushrooms. Cover with shredded cheese.

Step 5
Place chicken in oven for 5-10 minutes until cheese starts to bubble.
