Healthy Chocolate Pancakes (Gluten-Free, High-Fat, High-Protein) By: Kayla H.

I am 31 years old and I have CF. I am dedicated to my health and eat incredibly healthy as well as exercise regularly. I have researched the health benefits of coconut oil and other coconut products. Coconut offers high fat and high calories which are great for people with CF. I like it incorporated into this recipe. I also like the fact that these pancakes are high in protein. They are low in sugar but are chocolaty and sweet! It's like eating a dessert!
Ingredients
- 1/4 c tapioca starch (can use any starch)
- 1/4 c cocoa powder (or carob for an even healthier version)
- 6 Tbsp protein powder (unflavored or vanilla)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 8-10 drops liquid stevia (or sprinkle some powdered stevia in)
- 1 egg
- 1 Tbsp coconut oil (liquid, melted)
- 1/2 c coconut milk (or coconut cream for more fat! Can use any milk but coconut milk adds more fat for the CF diet)
- 2 tsp apple cider vinegar
- Add All Ingredients
Directions
- Prep Time: 10 minutes
- Cook Time: 10 minutes
Mix all the dry ingredients together really well in a large bowl.
Next, mix in vanilla, stevia, egg and coconut oil. Stir well.
Add coconut milk and apple cider vinegar. Mix well.
Cook pancakes in a skillet pan on medium/low to medium heat.
Spray pan with some oil or coat with some coconut oil.
Pancakes only need a few minutes on each side. Just watch the bottoms and flip when they are ready. Keep a close eye on them because they burn fast!
Makes two large pancakes.
You can make larger batches and then freeze some for later! Just wrap in foil and pop in the oven for 15 minutes and you have breakfast! Spread some more coconut oil or coconut cream on top and top off with some fresh fruit. Try spreading peanut butter on them for a chocolaty peanut butter breakfast (or dessert!).
