Recipe Story
I am an adult with CF. My great grandmother emigrated here from Ireland when my grandfather was 10. She was very proud to be an American, as much as she missed Ireland, and so was very proud to use baking powder and sour cream in her bread (these were not available in Ireland). So when she would visit her friends and family back in Ireland, she would brag a little to everyone that her soda bread was much better. If you want a more authentic soda bread, use buttermilk instead of sour cream (same quantity), and only use baking soda (4 teaspoons).
Ingredients
- 3 1/2 c sifted flour
- 1/2 c sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 c raisins
- 2 c sour cream
- Add All Ingredients
Directions
Sift dry ingredients. Make a well in the center of the dry ingredients, and add sour cream. Mix it up (if more liquid needed, can use milk or water).
Grease and flour a pan (8x8x2 inches).
Pour ingredients in. Carve a deep cross in.
Bake for 1 hour in 350 degree heat. After it's done baking, you should hear a hollow sound when you knock on the bottom.
