Recipe Story
My 30-year-old daughter has CF. This is a recipe from her grandmother's collection that she ate as a child. Now an adult and a vegetarian for 15 years, we would substitute sautéed eggplant slices or sautéed Portobello mushroom slices instead of meat.
Ingredients
- 1/3 lb lasagna noodles
- 1 lb ground beef
- 1 medium onion
- 1 clove of garlic, minced
- 6 oz tomato paste
- 16 oz pasta sauce
- 1/4 c water
- 1 tsp salt
- 3/4 tsp dried oregano
- 2 c cottage cheese
- 1/2 lb mozzarella cheese
- 1/4 c parmesan cheese, grated fresh
- Add All Ingredients
Directions
- Prep Time: 20 minutes
- Cook Time: 45-50 minutes at 350 degrees
Cook noodles following directions on package.
Brown beef with onion and garlic. Drain.
Add tomato paste, sauce, salt and oregano.
Mix in cottage cheese.
In 9x13 baking dish, alternate layers of noodles, mozzarella cheese and sauce mixture.
Top with grated Parmesan cheese.
Bake covered in foil for 30 minutes; last 15-20 minutes uncover and finish baking.
