Cranberry Nut Bran Muffins By: Edna D.

Recipe Story

We had two children with CF, a girl and a boy. Our daughter died of CF at age 12 in 1987. Our son is 32 and has a family. He continues in reasonable health, and we are very grateful for him.

Ingredients

  • 2 1/4 c bran cereal
  • 2 eggs
  • 1 1/4 c milk
  • 1/4 c oil
  • 1 c dried cranberries
  • 3/4 c walnuts or pecans
  • 2 c flour (regular)
  • 1/2 c sugar
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • Add All Ingredients

Directions

  • Prep Time: 20 minutes

  1. Whisk together eggs, milk, oil and vanilla.

  2. Place bran cereal, cranberries, and coarsely chopped nuts into a bowl, and pour liquids over them.

  3. Stir and let sit for 10 minutes.

  4. Combine dry ingredients, mixing well.

  5. Place dry ingredients into bowl with wet mixture and mix by hand until just combined.

  6. Use spray oil to prepare muffin pans (makes about 18-20 muffins).

  7. Bake at 350 degrees for 15-18 minutes.

  8. Store in refrigerator, or freeze and microwave to enjoy.
