Nancy's Sweet Potato Casserole By: Ann R.
Recipe Story
Our 37-year-old son has cystic fibrosis and loves to eat this dish with turkey or chicken so he can keep up his 180 pound weight and BMI.
Ingredients
- 29 oz sweet potatoes
- 1/2 stick(s) unsalted butter, melted
- 3/4 c sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 eggs, beaten
- 3/4 c cornflake crumbs
- 1/2 c chopped nuts
- 1/2 c brown sugar
- Add All Ingredients
Directions
Warm potatoes in the liquid from the can and blend to a smooth consistency in a blender or food processor.
Add melted butter, sugar, cinnamon, nutmeg and eggs. Mix well.
Place mixture in a 2 qt casserole dish.
Bake at 400 degrees, covering after 20 minutes.
In a separate container, mix cornflakes, nuts, melted butter and sugar.
Spread cornflake mixture over potatoes and brown for 10 minutes.
