Recipe Story
I am the mother of a 37-year-old son who has cystic fibrosis. As he is doing well and weighs a healthy 180 pounds, he likes to eat a lot of healthy rich foods to maintain his weight and health. When I serve this potato dish, he usually eats at least two servings.
Ingredients
- 10 large baking potatoes
- 1 tsp salt
- 1/2 tsp paprika
- 3/4 tsp black pepper
- 1/4 tsp white pepper
- 1/4 tsp celery salt
- 2 c whipping cream
- 1/2 c melted butter
- Add All Ingredients
Directions
- Prep Time: 40 minutes
- Cook Time: 25 minutes
Peel and slice 1/4" crosswise 10 large potatoes.
Drop into pan of water to prevent browning.
Heat pot of water and add drained potato slices.
Cook just to precooked state and drain immediately.
Place into a 10"x13" (or 10"x15") oil-sprayed baking pan.
Sprinkle with salt, paprika, white and black pepper and celery salt.
Pour 2 cups whipping cream over potatoes.
Bake uncovered at 425 degrees until bubbly or about 25 minutes.
Pour butter over potatoes and return to oven for 5 minutes to brown lightly.
