Recipe Story

Our family including our son with CF repeatedly asks for this cake as it is healthy as well as tasty. The cake keeps well and is even better the second day as the flavors have had time to blend.

Ingredients

  • 2 c sugar
  • 4 Granny Smith apples, finely chopped
  • 3/4 c canola oil
  • 4 large eggs
  • 3 c flour
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla
  • 1 c toasted, chopped pecans
  • 3 Tbsp powdered sugar
  • Add All Ingredients

Directions

  • Prep Time: 40 minutes
  • Cook Time: 40 minutes

  1. Use two mixing bowls.

  2. In first bowl, mix finely chopped apples and sugar; let stand for 30 minutes or longer.

  3. Run hand mixer on medium until apple bits are slightly disintegrated.

  4. Add canola oil to apple bowl and mix well. Add eggs and beat well.

  5. Preheat oven to 325 degrees if using 9"x13" glass pan. If using metal pan, preheat to 350 degrees.

  6. In larger bowl, mix dry ingredients together.

  7. In larger bowl, add apple mixture to dry ingredients, stirring until mixed.

  8. Add vanilla and pecans, stirring until mixed.

  9. Press into well greased and floured pan.

  10. Bake at 325 degrees for glass pan or 350 degrees for a metal pan for 40-45 minutes.

  11. When cool, sprinkle with powdered sugar.
