Recipe Story

I am the Mom of a 22-year-old daughter, Katie, living with cystic fibrosis. I am always looking for ways to fatten her up. I have made this dish for her since she had teeth to chew it! My grandmother, Anna Thomas, taught me this recipe after years of begging for it. My grandmother was of the school that nothing is wasted; she usually would buy a ham and use up every bit until only the bone was left and then make soup with it. She made this for me every time we would visit. My mother would attempt to make it, but burned it each time, so as I got older I decided to ask for the recipe. It is one of those feel better, stick to your ribs, comfort foods you crave when you are down and sick. Full of fat, calories and love!

Ingredients

  • 10 large Russett potatoes
  • 2 c ham cubes
  • 1 medium yellow onion, diced
  • 1 1/2 stick(s) salted butter
  • 4 Tbsp flour
  • Salt & Pepper (to taste)
  • 1-2 c heavy cream
  • Add All Ingredients

Directions

  1. Peel and slice potatoes (around ¼ inch thick).

  2. In large roasting pan or cake pan cover bottom of pan with a layer of potato slices, add approximately 1/2 cup of ham, add a handful of chopped onion, dot with butter and add salt and pepper.

  3. Repeat 2-3 times until all ingredients are gone.

  4. Cover top with butter cubes.

  5. Pour heavy cream over top.

  6. Cover with aluminum foil.

  7. Bake at 350 degrees for 1 hour until potatoes are tender.
