Recipe Story
My 12-year-old granddaughter has CF. This recipe is one that all of my grandchildren love. As a child I remember my dad making this. Chicken became the new veal.
Ingredients
- 4 boneless skinless chicken breasts
- 4 c chicken broth
- 1 large yellow onion
- 1 pkg of extra wide noodles
- 3 Tbsp capers (optional)
- 4 Tbsp butter
- 1 c flour
- 2 tsp salt
- 1 tsp pepper
- Add All Ingredients
Directions
Pound chicken breasts until they are about 1/4 inch thick.
Coat chicken breasts with flour, salt and pepper (I usually put these ingredients in a paper bag with the chicken breasts and shake).
Brown breasts in 2 tbsp. butter.
Remove chicken and save the drippings.
Slice onions thinly.
Sauté onions in pan with the remaining butter and 1/2 cup of broth until they are caramelized. Set aside.
Add remaining broth and enough of the flour mixture to thicken liquid.
Add chicken and onions to sauce and cover.
Cook on low for 45 minutes stirring occasionally.
Cook noodles according to package instructions.
Serve over noodles and sprinkle with capers (optional).
