Killer Guacamole By: Kevin H.
Recipe Story
My Daughter has CF. She hates the look of this guacamole, but loves the taste.
Ingredients
- 2 ripe avocados
- 1/4 c finely chopped onions
- 1/4 c finely chopped tomato
- 1/4 c chopped fresh cilantro
- Large, medium-heat fresh chili pepper
- 1/4 tsp salt
- 1/4 tsp lime juice
- 1/4 c honey
- Add All Ingredients
Directions
Smash the avocados in a bowl.
Stir in the onions and tomato and mix it up; don’t worry if a few tomato seeds get in the mix.
Mix in the cilantro.
Now the pepper. If your fingers burn when you chop it up, then it is too hot. If you want a mild guacamole don’t use the fresh chili pepper. I generally take out all the seeds and membrane and wash the pepper before chopping it up into small pieces.
Now add the salt, the lime juice and the secret ingredient, the honey.
At this point you want to mix it up a lot. If you have a mixer, go ahead and use it.
For the best flavor, chill before serving.
