Simply Delicious Roasted Pork Shoulder By: Sue L.

Recipe Story

My darling daughter was diagnosed with CF when she was 22 months old. She used to love this recipe when she was younger, though is now a vegetarian. We still enjoy it, though. And, it's so easy to make.

Ingredients

  • 4 lb pork shoulder
  • 3 Tbsp garlic infused olive oil or plain olive oil
  • 3 Tbsp garlic, chopped
  • 1 tsp black pepper
  • 2 tsp kosher salt
  • Add All Ingredients

Directions

  • Prep Time: 15 minutes
  • Cook Time: 4 1/2 hours

  1. Preheat oven to 425 degrees.

  2. Rinse the pork shoulder and pat dry.

  3. Mix together (small bowl): olive oil, garlic, pepper and salt -- whisk together to form a basting sauce.

  4. Apply sauce all over the pork with a pastry brush or with your fingers.

  5. Spray a meat rack with nonfat cooking oil. Put meat on rack and place into 13 x 9 roasting pan.

  6. Roast for 20 minutes.

  7. Reduce temperature to 325 degrees and cook until an instant read thermometer reads 185 degrees. Should take about 4 hours.

  8. Place pan with pork on a cooling rack on counter. Let rest for about 30 minutes.

  9. Can either pull apart with two forks, or cut into slices -- thick or thin.

  10. Depending on how you prepare the roast, your serving sizes will vary. Serve with creamy mashed potatoes or on ciabatta bread for a sandwich. Yum!
