Recipe Story

I have cystic fibrosis and I love spinach and artichokes. This is a fun and easy, healthy recipe and it is vegetarian. I love the vinegar flavor from the marinated artichokes because I crave the salty taste of the vinegar. You can also sprinkle a little salt on the casserole. My husband is vegetarian, so this is one of his favorite dishes. I try to eat as healthy as possible to stay healthy with CF.

Ingredients

  • 1 pkg organic spinach
  • 1/2 standard size package cream cheese
  • 2 jars marinated artichokes
  • 1/4 c bread crumbs
  • 1 c feta cheese
  • Add All Ingredients

Directions

  1. Rinse the spinach with water, drain the spinach and place it in a large pot.

  2. Place the cream cheese on the spinach and put the pot on a very low heat. Let the cream cheese melt and as it melts mix it in with the spinach.

  3. Drain the marinated artichokes. Add two jars of marinated artichokes to the cream cheese and spinach mixture.

  4. Heat the mixture. Mix the spinach, artichokes and cream cheese until the cheese is melted but keep it at a very low heat.

  5. Take the whole mixture and put it in a casserole dish. Spread the mixture evenly into the dish and sprinkle the bread crumbs on top. You can also add a little feta cheese on top of the casserole.

  6. Bake the casserole at 350 degrees for about 10 minutes. You just want the dish to solidify, not get too hot. You can serve this as a side dish at lunch or dinner. You can also put the spinach delight inside a fajita wrap.
