Italian Sausages and Peppers in Tomato Sauce By: Laura W.

Recipe Story

This recipe is from my maternal grandmother, Laura. She grew all of her own vegetables in her backyard garden, but I modified the recipe to use canned tomatoes. I have an adult son with CF.

Ingredients

  • 10 Italian sausages, some hot, some sweet
  • 1/4 c vegetable oil
  • 1 onion, sliced
  • 1 c water
  • 3 yellow peppers, sliced in strips
  • 3 green peppers, sliced in strips
  • 3 red peppers, sliced in strips
  • 3 c canned Italian plum tomatoes in puree, chopped
  • Salt and pepper to taste
  • Mashed potatoes or Italian bread
  • Add All Ingredients

Directions

  1. Cut sausages into 1 1/2" segments and place in a large, deep skillet with the water.

  2. Bring to a boil on medium heat.

  3. Let the water evaporate and allow the sausages to brown slightly in the accumulated fat. Drain sausages and set aside (they are not fully cooked at this point).

  4. Heat oil in a large pot over medium heat.

  5. Add the onions and cook until soft and slightly brown, stirring occasionally.

  6. Add the tomatoes with the puree, plus the salt and pepper. Simmer for 25 minutes.

  7. Add the sausage pieces and the pepper slices to the tomato mixture.

  8. Cover and simmer for an additional 25 minutes.

  9. Serve over mashed potatoes or crusty Italian bread to mop up the wonderfully sweet sauce.
