Sweet and Spicy Baked Beans By: Doug M.

Recipe Story

I have a daughter with CF. Every 4th of July, our next-door neighbor made wonderful baked beans, which my daughter loved. As we moved from the old neighborhood a few years ago, we wanted to make our own yummy baked beans and this recipe is the result.

Ingredients

  • 18 fl oz Bush’s vegetarian baked beans
  • 15 fl oz plain black beans
  • 6 bacon strips
  • 2 1/2 fl oz hot sauce
  • 1 white onion
  • 2 fl oz olive oil
  • 1 c brown sugar
  • Add All Ingredients

Directions

  1. Sauté onions in olive oil with a 1-2 small cuttings of bacon to add flavor.

  2. Cook bacon strips in a microwave or skillet. Blot grease with paper towels and cut into 1/4 inch chunks with kitchen scissors.

  3. Drain the liquid from the beans before using to avoid a "soupy" sauce.

  4. Combine all ingredients in a large cast iron Dutch Oven or oven-safe covered pot and stir with a large spoon until fully mixed.

  5. Bake (covered) for 1 hour in a preheated oven (350 degrees).

  6. Turn off oven and let cool for 1-2 hours if you have the time. If not, remove from oven and let cool on the stovetop.

  7. Serve warm.
